Ever felt like re-creating recipes that you see in Pinterest? I know it is very tempting to give it a try especially when the pictures are very well taken. Few weeks ago, my friend had her baby shower. All of us decided to bring a food item. Knowing the fact that my cooking can take a total wrong turn, I frantically started looking for recipes that are easy yet a crowd pleaser. One of the finalists was mini fruit lemon curd tartlets. There are many version of the same recipes on the internet but this is my take on the fruit tartlets.
You will need:
- Lemon Curd
- Mascarpone Cheese
- Ready-made Pie Crust
- Fruits pieces (Raspberries, Blackberries, Pineapple chunks)
Heat the oven to 450 degrees. Roll out the pie crust and cut small circles using a round cookie cutter or just use any small round bowl as a stencil. Press the mini pie crusts into a muffin tin. Once the oven is ready, bake them for approximately 8 minutes.
While the pie shells are baking, mix equal proportion of lemon curd and mascarpone cheese in a bowl and set it aside. Prepare some fruits for toppings. I used raspberries, blackberries and pineapple pieces. Once the pie shells are golden brown, take them out from the oven and let them cool for few minutes. Take the shells out. Scoop a dollop of lemon curd mix into the shell. Top it off with fruits and you are done!
My shells were not the best looking ones but the lemon curd mix was really good! Maybe I need to work a little more on my presentation…?
