Let’s be honest if you have a 9-5 kind of job, you have skipped your breakfast couple of times a week. I am guilty of doing so. I like to sleep in and try to get out of the house within 30 minutes from time I open my eyes. I usually grab a banana or yoghurt on my way out. Sometimes I make myself oatmeal at work. Recently I have been making energy balls that I can grab and go and eat wherever possible. There are many variations of energy balls but I am pretty sure this one is the easiest I have ever tried. My best friend Fatima introduced me to this recipe and I haven’t tried any other recipe ever since! Very easy recipe, less time-consuming but delicious!
Here is all the ingredients you will need:
- 1 lbs of Medjool Dates or regular Deglet Dates
- About a cup and half of shredded Coconuts
If you have regular Deglet dates, make sure to soak them for some time until it’s flesh softens. Warm water softens the dates faster.
Remove the pit from the dates and put them into a food processor. Add 1/2 cup of shredded coconut to the food processor. Set aside the remaining half of the coconuts in a bowl.
Puree the mix of coconuts and dates until smooth. If the mixture is too thick and food processor is not blending smoothly, you could add few tablespoon of water. Make sure that your mixture is still thick enough to roll it into small balls.
Next step, just scoop out the mixture and roll them into small balls. Dip the rolled balls into the bowl with shredded coconut. Set them in a small plate.
At this point, your energy balls are ready to be consumed or you can set it in refrigerator to eat later! I prefer it when dates + coconut mixture solidifies a little more.
